300 F oven. Parchment lined roasting or sheet pan.
Amounts make about 3 cups. Feel free to double or triple.
1 cup old-fashioned oats
1/2 cup unsalted walnuts or hazelnuts, roughly chopped
1/4 cup raw sunflower seeds
1/4 cup pepitas
2 tablespoons raw sesame seeds
2 tablespoons untoasted buckwheat groats
1 teaspoon fine sea salt
3/4 teaspoon fennel seeds
3 tablespoons neutral oil
2 tablespoons good-quality maple syrup
Stir together the dry ingredients. Warm the neutral oil and maple syrup for about 1 minute in a small saucepan. Pour over the dry ingredients + stir until evenly coated.
Spread onto pan. Bake, stirring every 15 minutes, until golden brown, about 45 minutes.
Yummm. Cardamom! I will definitely try that. We use cardamom in our coffee every morning. Our local halal market is the best place ($$) for some spices and seeds, and especially the ones that come from the Middle East. Looking forward to filling the containers from Aldi that they sell nuts in. They’re plastic square jugs but hold a LOT (1 lb.) and have large mouths.

I pass up cereal in the grocery aisle because a voice in my head says: I’m not paying 5 bucks for a bag of mostly air-- besides I could make that at home!
Ounce per ounce, it definitely is cheaper to make your own, but as you probably know, nuts (and some seeds, like pepitas) are not cheap. Yes, RW is very methodical when he's in the Granola Zone. He abides by the stir-every-15-minutes rule -- i tend to be looser on that front. I also really like swapping out cinnamon with cardamom.

Especially in the summer when we have lots of fresh berries, I skip the dried fruit and replace with an extra cup of seeds, usually pepitas. Just FYI.

I love savory granola! I’ve made one with turmeric, black pepper and garam masala...I wish I could recall the exact recipe.
